Homemade Pumpkin Pie:
a tasty homemade holiday gift idea

homemade pumpkin pieThose who like homemade pumpkin pie like it a lot. Giving away a pie is a fantastic homemade Christmas gift idea as you can make it in advance and pop it into the freezer until you are ready to give it away for the holidays.

If you're organized and frugal, make a number of pies during the fall when pumpkin is on sale; that way, you can save yourself time and money!

Don't forget to give some whipped cream along with your pie! For a special touch, flavour your cream with vanilla or maple syrup.

Ingredients

(makes one pie)
- one 9 inch pie crust
- 3 eggs
- 1 egg yolk
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ginger
- 1/2 teaspoon cloves
- 1 cup milk
- 1/2 cup heavy cream
- 2 1/2 cup pumpkin puree

Whisk eggs and egg yolk together until frothy. Whisk in sugar, salt and spices. Gradually add in milk and cream. Fold in pumpkin puree until just incorporated. Pour into pie shell.

Bake at 450F for 10 minutes. Reduce heat to 350F and bake for another hour until set. (My pies actually took about an hour and fifteen minutes to set).

Eat fresh or freeze. If re-heating from frozen, let thaw on counter top for 1 hour and then heat in a 375F oven on lowest rack for 35 to 40 minutes or until warm.
