Flavoured Sugars

When serving a nice cup of coffee at Christmas I sometimes dip the rim of the cup in liquor, and then in flavoured sugar.
To make the sugars, grate the peel of an orange or two (preferable organic but certainly well washed) and add it to a cup of white sugar in a jar. Seal tightly and shake or stir daily for a week or two.
It is also delicious with lemon or lime peel, and it's very nice sprinkled on top of muffins before baking.
