Coffee Cake Muffin
This coffee cake muffin recipe is a really easy homemade gift idea to give to someone who loves to drink tea or coffee.
I love the cake-like texture of these muffins...it's what makes washing them down with some rich, dark coffee so wonderful. Let's not forget the delicious cinnamon and sugar topping that can also be found swirling inside the muffin.
Muffins were made to become gifts in a jar. Simply beat all of your wet ingredients together, add in the dry ingredients and stir until everything is moistened.
Mix these ingredients in a bowl
- 3 cups flour - 4 teaspoons baking powder - 1 teaspoon salt - 1 cup sugar
Spoon the dry ingredients from your bowl into a quart-sized canning jar. Top with some lovely fabric and include a recipe card with the baking instructions.

Instructions for baking
- 1/2 cup butter - 2 eggs - 1 1/2 cup milk - 1 teaspoon vanilla
Cinnamon Mixture - 1 cup brown sugar - 4 Tablespoons flour - 2 teaspoons cinnamon
Preheat oven to 400F. Beat butter and eggs together. Add milk and vanilla. Add the dry ingredients from your jar and stir until moistened. Fill muffin tins 1/3 full and sprinkle on cinnamon mixture. Add rest of batter until the muffin tins are 2/3 full and top with remaining cinnamon mixture. Bake for 20 -25 minutes.

Makes 24 muffins
