Caramel Popcorn Recipe

Finding a great caramel popcorn recipe is like finding that special someone; once you have one, you never want to let it go!

This homemade caramel popcorn is great to whip up for a holiday snack or to give as a homemade holiday gift to friends and family. It keeps well, which means you can make it in advance and spread out your holiday baking over a number of days.

Caramel Popcorn (serves 10)

1/2c butter
1c brown sugar
1/4c corn syrup
1/2t salt
1/2t real vanilla extract
10c popped popcorn

Heat the oven to 250F and put the popcorn into a large bowl.

Melt butter in a saucepan over medium heat. Add brown sugar, corn syrup and salt. Stirring constantly, bring the mixture to a boil. Next, without stirring, allow it to boil for 4 minutes.

Remove from heat and add vanilla. Pour the caramel mixture over the popcorn.

Spoon the popcorn onto two large, shallow baking dishes and place in the oven for about an hour, stirring every 15 minutes or so. Remove from oven and allow the popcorn to cool completely before breaking it into pieces.
