Almond Bark

What's a Christmas without Almond Bark? This decadent chocolate treat can stand alone, or be dotted with crunchy almonds, chewy cranberries or tangy candies.

Almond Bark is the perfect holiday food gift to give because everybody loves chocolate - so you really can't go wrong giving this stuff away.

It's sinfully easy to make. Play around with different varieties of chocolate, or add different kinds of nuts and candies to the bark. Wrap it thoughtfully and you'll have a cheap Christmas gift to give.

The Ingredients

You'll need:

- 2 1/2 cups of milk chocolate melting chips
- 3/4 c of white milk chocolate melting chips
- almonds...or another goody to add to the chocolate

- double boiler, or a saucepan with 1" of water in it.
- parchment paper
- baking sheet

The Making

1. Place your melting chips in a double boiler over medium heat. If you are making a marbled bark with both white and dark chocolate, make sure that you are melting the two different kinds of chocolate at the same time (in two different double boilers, of course). Stir occasionally until all of the chocolate has melted.

If you don't have a double boiler, you can fill a sauce pan with 1" of water. Set a mug in the pan and fill it about half way with melting chips. Heat the pan over medium heat and stir the chocolate until it is melted.

This method works best with small amounts of chocolate.

2. Once the chocolate has melted, spoon it onto a baking sheet that has been covered with parchment paper. Use the back of your spoon to spread out the chocolate.

If you want a marbled look, drizzle white chocolate over the milk chocolate and then swirl the colours around together with the tip of a knife.

3. Sprinkle the chocolate with toasted almonds, cranberries, candied pecans...anything!

4. Let your almond bark cool completely before breaking it into pieces. Wrap it in cellophane, and tie on a pretty tag with a ribbon.

Try these different combinations:

white chocolate and cranberries
white chocolate and pecans
dark chocolate and almonds
dark chocolate and chocolate covered coffee beans
milk chocolate with coarsely chopped pretzels
